Paletas!!

We are right smack in the middle of summer. The thermometer is hitting 100 degrees regularly and we are all doing our best to stay cool. One way to help cool down is with an ice cold popsicle. Popsicles don't have to be the otter pops we remember as a kid. Making some healthy and delicious and even adult versions of these summer treats is really easy. 

Here are 4 different popsicle recipes to help you get through the summer heat wave. 

Fruit & Yogurt





My sister served these to my kids one day while at her house and I could not believe how easy they are to make, and how much my kids loved them. These are as simple as filling your popsicle mold about 3/4 of the way with low-fat yogurt then drop in pieces of fruit. The fruit can be fresh or frozen. When it comes to flavors you can get as creative as you like. A few combos we really like are vanilla yogurt with strawberries and lemon yogurt with blueberries for a nice tart taste.

Lemonade Pops



Lemonade is a classic summer drink. Why not make it into a popsicle? You can use regular lemonade or pink lemonade. Try adding pieces of strawberries or even strawberry puree to make a strawberry lemonade treat. 

Cookies and Cream Pops

If you are craving something creamier and more like ice cream these popsicles will hit the spot. These are a bit more complicated but well worth the time. Here is what you'll need:
  • About 14 chocolate wafer cookies
  • 1/4 cup superfine sugar
  • 1/4 cup water
  • 1/2 cup sour cream
  • 1/4 cup whole milk
  • 1 cup heavy cream
  • 1 tsp vanilla extract
Mix sugar and water until sugar has completely dissolved. Then add in sour cream, milk, heavy cream and vanilla. Crumble the chocolate cookies and add to mix. Pour mix into your molds, freeze and enjoy!

These are for the 21 and over crowd. I mean why should the kids get all the treats? Pineapple and raspberries makes these fruity treats so refreshing. The alcohol makes them for adults only! To make these you will need:
  • 1/2 a large pineapple
  • 13 raspberries
  • 4 oz vodka
  • 2 oz pomegranate liqueur
Add pieces of pineapple and vodka into blender and blend until well blended and set aside. Blend together the raspberries and pomegranate liqueur and set aside. In your popsicle mold 1/2 oz of the pineapple mixture then pour 1 oz of the raspberry mixture, then top off with the pineapple. Use a butter knife to kind of swirl the two mixtures together to get that red and yellow swirl look. Freeze and enjoy on a hot summer night!

Almost anything you can drink can be made into a popsicle.
